In the kitchen

Eve and I went a little crazy at the grocery store yesterday and came home with way too many bananas!  “They are so little and cute!” she said. “They are only $.49/lb,” I said. So there you have it.

This morning we decided to cut them up and freeze them, dipping some in a chocolatey peanut butter mixture first.  Pop them all in the freezer and a few hours later you have a delicious sweet treat.  Yum!!

To balance that, we also cut up a bunch of kale and made kale chips.  Eve says they are just ok but I suspect the entire bunch of kale will be in my stomach by the end of today! Could be worse. :-)

    • The banana bites or the kale chips? The banana bites are pretty tasty. Eve and I like them. Alan says they are too cold for his liking and Lex says they have bananas and therefore he won’t eat them. I couldn’t get the chocolate peanut butter mixture to a liquid enough stage, so we had some trouble getting them fully coated. I’m not sure if I need different chocolate (I used Toll House Semi-Sweet Morsels, from the BJs bag I buy!) or different peanut butter (I used Teddie). Probably good old Jif would have smoothed out just perfectly. I don’t know.

The kale chips are ok. Addicting in a salty, oily sort of way.

    • Hey Anna – This was my first time and I’m far from an expert! I ended up shuffling them around half way through cooking. When the specified time was met I found the outer ones to be a little over done and the interior ones to be still soft and oily. So I removed the outer ring, shuffled the rest around a bit, then put them back in for a few more minutes. They tasted pretty good, but definitely like KALE chips. No fooling anyone that they’re potato chips or candy or anything. :) In the end we had some that were a little over done (but not burnt), some that were just right, and some that were a little under done. I’m not sure what the magic trick is. I’ve tried carrot chips in the past, which is the same process, and ended up with the same mixed results. Let me know if you figure out the secret :)
