{"id":3439,"date":"2010-10-14T21:40:33","date_gmt":"2010-10-15T01:40:33","guid":{"rendered":"http:\/\/familyblog.datdec.com\/?p=3439"},"modified":"2010-10-14T21:45:42","modified_gmt":"2010-10-15T01:45:42","slug":"my-current-favorite-apple-treat","status":"publish","type":"post","link":"https:\/\/familyblog.datdec.com\/?p=3439","title":{"rendered":"My current favorite apple treat"},"content":{"rendered":"<p>I came across a recipe for Baked Apple &#8220;Donut&#8221; Muffins the other day and despite my hesitation to bake these days&#8230; well, I had to make these!\u00a0 They are sooo delicious!!<\/p>\n<div id=\"attachment_3440\" style=\"width: 510px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/familyblog.datdec.com\/wp-content\/uploads\/2010\/10\/img_4734.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-3440\" src=\"http:\/\/familyblog.datdec.com\/wp-content\/uploads\/2010\/10\/img_4734-500x375.jpg\" alt=\"muffins\" title=\"muffins\" width=\"500\" height=\"375\" class=\"size-medium wp-image-3440\" srcset=\"https:\/\/familyblog.datdec.com\/wp-content\/uploads\/2010\/10\/img_4734-500x375.jpg 500w, https:\/\/familyblog.datdec.com\/wp-content\/uploads\/2010\/10\/img_4734-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><p id=\"caption-attachment-3440\" class=\"wp-caption-text\">Pure yumminess!<\/p><\/div>\n<p>This recipe is based on the one I found at <a href=\"http:\/\/www.frugalcrunchychristy.blogspot.com\/2010\/09\/baked-apple-muffins.html\">Frugality and Crunchiness with Christy<\/a>.\u00a0 I made some modifications below.<\/p>\n<p><strong>Baked Apple &#8220;Donut&#8221; Muffins<\/strong><br \/>\n<em>(makes about 24)<\/em><\/p>\n<p><span style=\"text-decoration: underline;\">Muffins<\/span><br \/>\n3 cups all-purpose flour<br \/>\n1 cup sugar<br \/>\n1 TBS baking powder<br \/>\n1 tsp salt<br \/>\n1 tsp nutmeg<br \/>\n1\/2 cup vegetable oil<br \/>\n2 large eggs &#8211; beaten<br \/>\n1 cup milk<br \/>\n2 cups cored and finely diced apples<\/p>\n<p><span style=\"text-decoration: underline;\">Topping<\/span><br \/>\n1\/2 cup (1 stick of butter) &#8211; <em>I used about 3\/4 of the stick<\/em><br \/>\n1 cup sugar &#8211; <em>I used about 3\/4 c<\/em><br \/>\n2 tsp ground cinnamon &#8211; <em>I just threw a bunch in!  Tired of measuring by this point :)<\/em><\/p>\n<p>1. Preheat oven to 350 degrees. Grease and flour a 12 cup muffin tin. (I made mini muffins and ended up with 48 of them, plus 6 regular sized muffins)<br \/>\n2. In a large bowl, combine the flour, sugar, baking powder, salt and nutmeg using a fork. Add the oil and work into the mixture using a fork or pastry blender until the mixture looks like coarse crumbs.<br \/>\n3. Combine eggs, milk, and apples. Add to the flour mixture, stir just until blended.<br \/>\n4. Spoon batter into the muffin cups (The KAF cookie scoop is super handy here!)<br \/>\n5. While the donuts are baking, melt the butter in a small bowl. Mix the cinnamon\/sugar combo into another bowl.<br \/>\n6. Let the muffins cool slightly then dunk them first in the melted butter and then in the cinnamon\/sugar mixture.  <\/p>\n<p>So yummy!  Lex requested some without topping (he doesn&#8217;t generally like toppings, even if it&#8217;s just cinnamon and sugar!) so we have some topped and some plain.
